I know we can buy asparagus year-round but the most flavourful and juicy ones turn up during this time of the year because they’re locally grown. And I’m all about buying local. You can find grown in BC asparagus all over the province: in the North, the Okanagan, the Kootenays, here in the lower mainland through to Vancouver Island. How great is that!
I just happen to be crazy about asparagus, in fact, I’m so enamoured I wrote a post about them. Anyway, in order to celebrate asparagus season, I wanted to share some of my favourite asparagus recipes with you.
Fregola Sarda Verde Salad
Fregola sarda is pasta from Sardinia. It’s similar to couscous and consists of semolina dough which has been rolled into small balls and toasted in an oven. It has a mild nutty taste and a slightly chewy texture. While it’s typically cooked in tomato sauce, I love it in this light and bright, springtime salad full of asparagus, green beans and peas.
Crostini with Rouille Sauce & Asparagus
Rouille is an olive oil-based sauce spiced up with cayenne pepper and coloured with saffron. It’s from Provence and is typically served with bouillabaisse. However, it’s equally delightful spread liberally onto toasted baguette slices and topped with asparagus tips.
Asparagus and Havarti Omelette
I used the asparagus tips I saved when I made my chilled asparagus soup (recipe follows) for this flavourful omelette. Personally, I like omelettes for dinner, but this would be great for a relaxing, leisurely brunch or a late lunch on the patio.
Chilled Asparagus & Fennel Soup
This soup, with the addition of fennel and fresh thyme, is light and refreshing, perfect for a spring (or summer) day. Serve with an asparagus & cheese omelette.
Tortiglioni with Asparagus & Lemon
This easy to make pasta dish is all about spring…it’s light and fresh and full of lemon flavour. All topped off with the season’s first asparagus. I used alpindon cheese, from Kootenay Alpine Cheese, in the recipe. It’s similar to parmesan but it’s vegetarian. You could use asiago if you can’t find alpindon.
Orzo Salad with Asparagus, Olives, Feta & Roasted Tomatoes
The combination of asparagus, tart lemon and dill really works in this easy to make pasta salad. The olives and creamy feta add a nice saltiness.
Potatoes, Asparagus, Zucchini & Peas with Cheesy Béchamel
I love spring vegetables…asparagus, zucchini, baby potatoes and peas, count me in. These favourites of mine all come together in this incredibly satisfying baked vegetable dish.
Couscous Salad with Asparagus, Zucchini & Peas
It wasn’t that long ago that I discovered Israeli couscous (also known as pearl couscous). It looked so interesting I had to buy it but wasn’t sure what to do with it. I played around (yes, it’s okay to play with your food!) and created this tasty salad.
