It’s asparagus season! I happen to love asparagus, especially the thicker ones. I think they have more flavour than the thin asparagus so that’s why I chose to use them in this salad. I used mixed baby salad green but if you can find watercress you could use that instead.
The slightly sweet ginger and orange vinaigrette complement the asparagus perfectly. It gets its unique flavour from the addition of ginger and orange spread. I used St. Dalfour brand (it’s similar to marmalade).
