Ingredients
  • 900g russet potatoes
  • 45ml butter
  • 720ml curly kale,ribs removed & chopped
  • 4small green onions,chopped
  • 60 ml cream
  • salt,to taste
  • Small knob butter
Instructions
  1. Cook the potatoes in salted water until tender.  Drain and either put through your ricer or mash.  Set aside.
  2. Melt the butter over medium heat in the same pot you cooked the potatoes in.  Add the kale and cook, tossing until wilted and tender, about 2 minutes.
  3. Add the green onion and cook for another minute.
  4. Add the cream and potatoes, stir until heated.  Taste for salt.
  5. Place into bowls, top with a bit of butter and serve.
