French lentils (aka puy lentils) are grown primarily in Saskatchewan! I use them a lot, they’re perfect for stews because they keep their shape, unlike green or red lentils which tend to meld into sauces and soups. Make sure you use regular polenta, not the quick cooking type.
This red wine lentil stew, topped with cheesy polenta triangles is perfect for this time of year. Serve it with some roasted carrots or steamed green beans. Or you could start the meal off with a green salad like this one.
