For me this is the perfect end-of-summer salad. The lemon vinaigrette and bright fresh herbs give it a light refreshing taste reminiscent of summer while the farro and roasted cauliflower remind me of satisfying autumn meals.
I like this salad served at room temperature but you can serve it warm or cold, however you prefer it. Serve with vegetarian muffulettas. Pinot grigio goes well with this salad.
