Ever eaten a sunchoke? They’re also know as Jerusalem artichokes, although they have nothing to do with either Jerusalem or artichokes. They originate in North America and are the tubers of a type of sunflower. They have the texture of water chestnuts and taste slightly nutty. I think they’re delicious.
Like most tubers they’re versatile. You can toss them with olive oil and bake them. They can be sliced and fried or boiled and mashed. But I particularly like them in these pot pies.
