I’ve been on a bit of a sweet potato kick lately. It all started off with slow roasted sweet potatoes that morphed into slow roasted sweet potato soup. Today I decided to make a white bean and sweet potato stew. This dish is perfect for a gloomy autumn day. Not only is it delish (it’s now my favourite stew!), it’s packed with nutrients. Serve this filling and satisfying stew with brown or white basmati rice.
