This is my take on a vegetarian casserole I’ve enjoyed many times at one of my favourite neighbourhood Greek eateries, Maria’s Taverna.
The combination of potatoes, carrots, green beans and oregano really works for me. But you could change up the vegetables if you like. Fava beans, red pepper or zuchinni would be a nice addition. Serve this with hummus and pita and some deli-bought dolmades.
