Za’atar is a seasoning popular in the Middle East. It’s fragrant, flavourful and versatile. It’s also ridiculously easy to make. Just blend together some lightly toasted sesame seeds, dried oregano, sumac and some salt…that’s all there is to it.
Sumac is the only unusual ingredient in Za’atar. It’s from the flowers of a shrub that grows in East Asia, Africa and some part of North America. Sumac has an earthy lemon flavour. It can be over-powering on it’s own but it’s perfect in za’atar.
Use za’atar sprinkled on flatbread and grilled vegetables or in dips like baba ghanoush. I love it sprinkled on feta cheese that’s been drizzled with olive oil.
